Cranberry, Apple, and Mint Soup

This makes an unusual, fresh starter or simply a quick refreshing snack in the middle of the day.

Serves: 4

Ingredients:
2 1/4 cups Cranberry Juice
1 1/2lb. Dessert Apples (peeled, cored, and chopped)
Juice of 1 Lemon
2-3 tbls. Sugar or Honey (to taste)
1 tbls. Fresh Mint Leaves
Mint Leaves (for garnish)

Procedure:
1. Put the cranberry Juice, apples, lemon juice, and sugar or honey in a large saucepan and bring to the boil. Reduce the heat, cover the pan, and simmer gently until the apples arc soft. Allow the mixture to cool.

2. Transfer to a blender or food processor and process until smooth. Add the mint leaves and whiz for a few seconds.

3. Turn the soup into a large bowl and chill for several -. Serve garnished with fresh mint leaves.
